Healthy Blueberry and Almond Overnight Oats

 

Breakfast time is a busy time, making sure we have everything we need to start the day! It’s easy to grab a croissant on the go or a loaded sandwich, and now and again that’s great, but for the ultimate breakfast on the go, we like it healthy and filling so that we’re not tempted to eat before lunch! Bonus points if it doesn’t take long to prepare!

Enter these delicious and healthy overnight oats which tick all of our breakfast boxes, healthy, delicious and super quick (simply five minutes the night before to prepare)! Top tip: if blueberries and almonds aren’t your thing, just switch up with any other fruit and nut combo!

Recipe

50g oats (gluten free or regular)

120ml almond milk (I used Silk Original Light)

1 teaspoon chia seeds

½ tablespoon maple syrup (or honey of preferred)

1 teaspoon vanilla extract

2 tablespoons slivered almonds

½ medium banana, sliced

50g blueberries

In an airtight container, mix oats, almond milk, chia seeds, maple syrup, and vanilla. Seal the container and place in the fridge overnight. In the morning, stir oats and top with slivered almonds, sliced banana, and blueberries. Have a great day!
