LèMert Christmas Recipes – Spinach Artichoke Zucchini Bites

Our favorite time of the year is almost here! Christmas! A time for celebrations with friends and family, sparkle and joy! One of the best things about Christmas is preparing (and eating) buffets with delicious bites over drinks and fun. We love spending time in the kitchen so we’ve been practicing some awesome recipes to share with you, so that you’re well prepared for your Christmas guests! Our first recipe is a great addition to your buffet table or as a starter to a main meal:

Spinach Artichoke Zucchini Bites

INGREDIENTS

120g cream cheese, softened

85g shredded mozzarella

32g freshly grated Parmesan

64g canned artichoke hearts, drained and chopped

64g frozen spinach, thawed and drained

2 tbsp. sour cream

2 cloves garlic, minced

Pinch crushed red pepper flakes

Kosher salt

Freshly ground black pepper

3 medium zucchini, cut into 1/2" rounds

DIRECTIONS

FOR OVEN

Preheat oven to 200 Celsius (180 Fan) and line a large baking sheet with parchment paper. In a medium bowl, combine cream cheese, mozzarella, Parmesan, artichokes, spinach, sour cream, garlic, and crushed red pepper. Season with salt and pepper.

Spread about a tablespoon of cream cheese mixture on top of each zucchini coin.

Bake until zucchini is tender and cheese is melting, approx. 15 minutes. For more color, grill on high, 1 to 2 minutes.

FOR AIR FRYER

In a medium bowl, combine cream cheese, mozzarella, Parmesan, artichokes, spinach, sour cream, garlic, and crushed red pepper. Season with salt and pepper. Set aside.

Cook zucchini slices in air fryer at 190 Celsius for 8 minutes then top each slice with 1 tablespoon cream cheese mixture.

Return to air fryer and continue cooking in batches until cheese is deeply golden and zucchini is tender, about 10 minutes more.
